Het kookboek van de Gouden Eeuw in short
The book makes one case in two voices. First it argues, in a short preface, that a meatless table is kinder to animals, safer for the men who would otherwise slaughter, supported by doctors and a walking race, and wiser in its use of land. Then it proves the point in the kitchen.
What Het kookboek van de Gouden Eeuw is about
Picture a seventy-mile walking race in Germany in 1898. Twenty-two men start, and eight of them are vegetarians. The first six to finish are all vegetarians, and the first meat-eater staggers in an hour after the last of them. Henrietta Latham Dwight prints this report in the opening pages of her cookbook.
The Golden Age Cook Book is a vegetarian cookbook from the years around 1900. Dwight wrote it for those who gave up meat and wondered how to eat well, and for those she hoped to win over to the cause of animals. You get a preface of scripture, poetry and doctors, then tables of food values and hundreds of dishes.
Voor wie is het?. Readers who delight in old kitchens, practical recipes and the history of vegetarian thought will love this book. It also appeals to those curious about how a cook in 1900 set a generous meatless table.

Animals have a claim on our kindness
Dwight opens her book with a plea. She sends it out to help those who have chosen a bloodless diet, and to win more support for the speechless ones. These are animals that have lived for centuries under the rule of man.
Her case rests on one shared life. Animals are humble brothers, she writes, and they have a right to care, justice and mercy. Scripture stands at the front of the book, with the passage in Genesis where plants and fruit are given as food, and a line from Isaiah that compares killing an ox to killing a man.
Another epigraph tells of Daniel, who tests ten days of vegetables and water and ends up healthier than the young men who ate the king's food. The book is offered to all who strive to follow the Golden Rule. For Dwight, the kitchen is where that rule is kept or broken.
What you put on the table is a moral choice as well as a matter of taste.

Vragen over Het kookboek van de Gouden Eeuw
What is The Golden Age Cook Book about?
It is a vegetarian cookbook by Henrietta Latham Dwight. A preface argues for a bloodless diet on moral, health and economic grounds, and the recipes then cover breads, eggs, soups, entrées, vegetables, salads, desserts, cakes, candies and preserves.
Is The Golden Age Cook Book strictly vegan?
No. Dwight's vegetarianism leaves out meat and fish but uses eggs, milk, butter, cream and cheese freely. Many recipes rely on them, so the book is better described as lacto-ovo vegetarian, and some recipes also call for wine or brandy.
What are mock meat and mock fish in this book?
They are meatless dishes shaped to look like familiar ones. Mock meat is a paste of bread crumbs, milk, butter, eggs and walnuts, while mock fish uses potato, egg and seasoning. They are served with sauces like those for meat.
When was The Golden Age Cook Book written?
Dwight died in 1909, and the preface quotes a newspaper cable dated July 3, 1898, so the book belongs to the years around 1900. Its measures, such as gills, saltspoons and cakes of yeast, reflect that era.
Is The Golden Age Cook Book worth reading today?
It offers a clear look at early vegetarian thought and a wide range of plain recipes. Readers who like food history, thrifty cooking and moral arguments about diet will find a lively preface and short, direct instructions.
